The recipe for gluten-free apricot-chocolate cookie

Makes approximately 30 cookies - Preparation time: 20 minutes - Baking time: 20 minutes
INGREDIENTS
- 125g of rice flour
- 125g of chestnut flour
- 350g of brown or blond cane sugar
- 2 tbsp of plant-based milk (rice, soy, oat...)
- 2 eggs
- 250g of butter or margarine
- 150g of dried apricots (choose soft apricots)
- 190g of milk or dark chocolate chips
- 1 pinch of vanilla powder
- 1 pinch of salt
- ½ sachet of phosphate-free yeast
PREPARATION
- Preheat the oven to thermostat 4-5 (140 °C).
- In a bowl, mix the two flours, the yeast, the chocolate chips and the chopped apricots.
- In another bowl, mix the sugar, butter, eggs and salt.
- Add this mixture to the previous one, then pour in the milk and mix again: the resulting dough should be firm.
- Fill an ice cream scoop with dough, then "unroll" the cookie.
- Place the balls of dough on a baking sheet lined with parchment paper or a silicone mat. Flatten the cookies well and then bake them.
- Cook for 20 to 25 minutes.
